Basically, I have logo on the left side and a couple of menu items to the right. There is some space between logo and menu where I want to insert some text. The text should be aligned along the same horizontal line with logo and menu. So far, I haven't found a satisfactory way of doing it.
You didn't mention the location of some text on small screens. I assume you want the text to be on the top of #my-navbar.
My approach is to create another .navbar-collapse to contain the text, and change the navbar-toggler to target .navbar-collapse.

On small screens, this structure already align everything up perfectly because bootstrap sets flex-basis: 100%; on .navbar-collapse except you need to set display:flex; on .navbar-header so that the branding is on the left and the toggler is on the right:

On large screens, since bootstrap sets justify-content:space-between; already on the .container-fluid, the .navbar-header, first .navbar-collapse that contains the text and the second .navbar-collapse that contains the menu are already in the correct position. The only thing you need to do is to align the text to center, and the menu to the right.
You can create your own css class and style that on your own. Or you might just use bootstrap utility class justify-content-center and justify-content-end:

I am trying to change the image in my naviation to a larger size.
However by doing this the navbar get's malformed.

You need to adjust the height of the navbar.
You can use this variable in LESS to adjust the height and it will center the navbar vertically and include all necessary padding:
#navbar-height
50px is the default.
How to adjust this in regular CSS is to change the min-height of .navbar and the height of navbar-fixed-top and then adjust padding of .navbar-nav.

Id like to dynamically center the navigation bar. i.e. A fix that doesnt hardcode a width.

Having followed the methodology of this question: twitter bootstrap -- center brand in nav bar I cannot centralize the navigation using margin-left: auto; and margin-right: auto;
Any help is greatly appreciated.
For the record, I don't quite like this solution =) But a brute force way may be to add the following CSS:

and the following jQuery to force the width down from the auto that is being inherited from .container:

How do I set the width of the links in my nav bar (including the brand name) so that it's 960px wide and centred within the page? I still want the background of the navbar to stretch the full width of the browser and also still want my responsive button to work when collapsing down.
I've tried various methods but can't seem to get it to work. Do I need to seperate out the background of the nav bar from the text and centre it somehow?

I faced the same problem with BS3, and the only way I found to resolve it was to use a combination of pull-left and pull-right

The two lines in the mobile navbar are caused by the clearfix of the navbar-header:

The media queries also add a float right for the navbar-right on smaller screens. To take this code in production, you maybe will fix the borders and possible the navbar css transisions too.
The problem is with the point at which the navbar collapses. By default, Bootstrap collapses at 768px. If you increase this, your navbar will collapse sooner and your problem will disappear.
The best way to do this is to customize your bootstrap file and change the #grid-float-breakpoint to 850px (or whatever size you need). You can easily customize bootstrap 3 from http://getbootstrap.com/customize/?id=9720390

I fixed it this way. Just right after the brand add two new lines with the same class and an additional class.
