I know this question has been asked before but the answers given are not valid for my case because it's slightly different.
I've created a formula that looks for sheets with a pattern in the name and then uses it's content to generate the output. For example

The thing is I need this formula to be re-calculated when a cell in a sheet with a name starting with DATA_SHEET_ changes.
I see most answers (and what I usually do) is to pass the range we want to watch as a parameter for the formula even if it's not used. But in this case it will not work because we don't know how many ranges are we watching and we don't even know the whole sheet name (it's injected by a web service using Google Spreadsheet API).
I was expecting Google Script to have something like range.watch(formula) or range.onChange(this) but I can't found anything like that.
I also tried to create a simple function that changes the value of cell B2 which every formula depends on but I need to restore it immediately so it's not considered a change (If I actually change it all formulas will break):

To force that a custom function be recalculated we could use a "triggering argument" that it's only taks will be to trigger the custom function recalculation. This triggering argument could be a cell reference that will be updated by a simple edit trigger or we could use an edit installable trigger to update all the formulas.
Example of using a cell reference as triggering argument
=sampleFormula("searchTerm",Triggers!A1)
Example of using an edit installable trigger to update all the formulas
Let say that formulas has the following form and the cell that holds the formula is Test!A1 and Test!F5
=sampleFormula("searchTerm",0)
where 0 just will be ignored by sampleFormula but will make it to be recalculated.
Set a edit installable trigger to fire the following function

updateFormula(['Test!A1','Test!F5']);
}
The function that will make the update could be something like the following:

I want to have various cells that have a dropdownlist to show/hide certain rows
I have the following table
If I select A2 (dropdownlist with AMERICAS_a and AMERICAS_s), with the _s option, I want to hide only rows 3 to 6
If I select A7 (dropdownlist with EUROPE_a and EUROPE_s), with the _s option, I want to hide only rows 8 to 12
I am using an Appscript which works only for 1 of the continent. I want to make it work for any of the Watchcell

I believe your goal is as follows.
Your Spreadsheet has the data validation rules for several cells in the column "A".
When the value of the dropdown list is changed, you want to run the script.
For example, when the suffix letters of the value of the dropdown list are _s, you want to hide rows until the next dropdown list.
For example, when the suffix letters of the value of the dropdown list are _a, you want to show rows until the next dropdown list.
Modification points:
In your showing script, in the case of both values of AMERICAS_a and AMERICAS_s, the rows are shown.
From your question, I thought that when the position of data validation rules is retrieved, the script might become simple.

I am a wanna-be developer who is trying to figure out how to hide a set of columns based off a checkbox being clicked.

I have 12 different sheets(one for each month) and I would like to hide columns A-H with the checkbox in I being clicked.

There are few ways one can do it.
Easiest and most recommended among all is to group those column and it will have pretty much same use which you're looking for.
If you're willing to use appscript for it. Here how it should be done:-
Open Script Editor from your spreadsheet.
Declare the onEdit simple trigger which will run every time when sheet will be edited.
So whenever you'll click on tickbox on I1 this function will trigger.
When a trigger fires, Apps Script passes the function an event object as an argument, typically called e.
For this object, we're gonna have the information we need to do our task, and also to restrict our operation to only to those months sheet and range belongs to it.
Here is the code, I tried my best to explain what happening in the code:-

I would add, sometimes instead of increasing the amount of formulas on the sheet (which causes the whole table to slow down), it is recommended to use an array formula that works for the whole column, and that you don't have to duplicate on every row.
In the case of your table, instead of adding a formula every time you insert a row with the following code sheet.getRange('C3').setFormula("=SUM(A3*B3)") - it is better to use one array formula in cell C1 ={"Col3";ArrayFormula(if(A2:A<>"",A2:A*B2:B,))}
I have searched high and low but I have been unable to find an answer (I am sure I am not explaining it right)
I have a Google Sheet that have multiple sheets (tabs) labeled TabA, TabB and TabC.
On this Google Sheet, I submit a slash command on Slack, which then auto-fills a row on one of the tabs using apps script.
What I am trying to do is simply insert a word called TabA into a specific cell each time a new row has been detected. And insert a word called TabB when a new row has been made on TabB sheet etc.

If I understood you correctly, you want to:
Keep track of new rows that are added to each sheet in your spreadsheet (TabA, TabB, TabC).
Write the name of the sheet in successive rows of column D of each sheet every time news rows are detected.
As you were told in the comments, Apps Script has no triggers to track changes made to the spreadsheet by a script. For example, onEdit trigger "runs automatically when a user changes the value of any cell in a spreadsheet".
Workaround (time-based trigger and script properties):
A possible workaround to this limitation is using a time-based trigger that will fire a function periodically. You can create this trigger manually, or programmatically, by running this function once:

This will fire the function trackRows every minute. This function's purpose is to track changes to each sheet rows since last time it was fired (in this example, 1 minute ago) and write the sheet name to a certain cell if the sheet has more rows with content than during last execution.

This function does the following:
Retrieve the script properties that were stored in previous executions.
Get all the sheets in the spreadsheet.
Check the last row with content in each sheet (via Sheet.getLastRow()), and compare the value with the one previously stored in script properties.
If the current last row is higher than the one stored in properties, write the sheet name in the first empty row of column D of the corresponding (starting at D2).
Store the current last row in script properties.
Notes:
The script is adding the sheet name to the first empty row of column D once, if it detects that new rows were added. It's not taking into account how many rows were added since last execution, it only considers if rows were added. This could easily be changed though, if that's what you wanted.
If you want to start from fresh, it would be useful to delete all previously stored properties. To do that, you could run this function once:
