I've a column "pid" and a lot of table on each database , then I want to update all table from every database with column "pid" and set 'pid' = 5 where 'pid' = 3 and set 'pid' = 6 where 'pid = '7' on 1 query .
I've find post like this and try to apply it:

From INFORMATION_SCHEMA.COLUMNS
WHERE COLUMN_NAME = 'pid'
Without condition for try it , then MYSQL just return me a select with value 0 .

UPDATE table_name
SET pid = 5
WHERE pid = 3;
It should be implemented like this. You simply tell to update the table named table_name to set pid as '5' wherever it finds it as '3'.

I want to simplify the following using dynamic SQL like one could do in Transact SQL.
I want to do something like:

and use #s instead of replace(field_name, '_complete','')

If I'm understanding your question correctly then you would want to use the PREPARE and the EXECUTE statements.
For example:
SET #s = replace(field_name, '_complete','');
PREPARE mystatement FROM
SELECT DISTINCT ...... ;
EXECUTE mystatement;

try this, this will find and replace the value

This statement will replace 0 to -, and display number as text with percent otherwise:

In particular table there exists a field of SET type with specific legal values:
personType SET('CUSTOMER','SUPPLIER','EMPLOYEE', 'CONTRACTOR') NOT NULL
Is there any way to query MySQL to get a list of the valid values? In the MySQL interpreter I would just run DESCRIBE someTable; however if there is a more direct method that one could use programmatically without lots of parsing it would be nice.

Just replace "some_table" and "some_column" for your specific table/column, and see the magic!
You will see a weird usage of "information_schema.COLLATIONS" - this is because we need a table there - any table - containing at least N rows, where N is the number of elements in your set.

Remember that in a set column you may have a combination of values or even an empty value (these are also valid).
I'm don't have a lot of knowledge of MySql (or SQL in general) so sorry for the noobness.
I'm trying to update a bunch of String entries this way:
Lets say we have this:
commands.firm.pm.Stuff
Well I want to convert that into:
commands.firm.pm.print.Stuff
Meaning, Add the .print after pm, before "Stuff" (where Stuff can be any Alphanumerical String).
How would I do this with a MySql Query? I'm sure REGEXP has to be used, but I'm not sure how to go about it.

Try something like this. It finds the last period and inserts your string there:
select insert(s, length(s) - instr(reverse(s), '.') + 1, 0, '.print')
from (
select 'commands.firm.pm.Stuff' as s
) a
To update:
update MyTable
set MyColumn = insert(MyColumn, length(MyColumn) - instr(reverse(MyColumn), '.') + 1, 0, '.print')
where MyColumn like 'commands.firm.pm.%'
Perhaps use a str_replace to replace commands.firm.pm to commands.firm.pm.print
$original_str = "commands.firm.pm.15hhkl15k0fak1";
str_replace("commands.firm.pm", "commands.firm.pm.print", $original_str);
should output: commands.firm.pm.print.15hhkl15k0fak1
then update your table with the new value...How to do it all in one query (get column value and do the update), I do not know. All I can think of is you getting the column value in one query, doing the replacement above, and then updating the column with the new value in a second query.
To update rows that end in '.Stuff' only:
